RECIPE : Waldkorn Signature BBQ Corn Bread

The ultimate bread to serve with a barbecue. A generous, indulgent burger that’s pure enjoyment – perfect for the barbecue season.


Waldkorn Corn Burger Buns​

INGREDIENTS — WEIGHTS — PREPARATION​

• WALDKORN® CORN — 50% — 1,000 g​

• Wheat flour — 50% — 1,000 g​

• Yeast — 5% — 100 g​

• Sugar — 3% — 60 g​

• Vegetable oil — 2% — 40 g​

• Water — 54% — 1080 g​

• Knead all the ingredients together until you have a smooth dough.​

• Spiral mixer: approx. 2 minutes on low speed, approx. 8 minutes on high speed.​

• Traditional kneading: approx. 25 minutes.​

• Dough temperature: ± 25°C.​

• Weight: 2,100 g.​

ASSEMBLY AND FINISHING​

• Divide the dough directly using the divider/weigher and flatten the balls.​

• Moisten them and sprinkle them with cornflour and/or sesame seeds.​

• Place them preferably on baking mats or in moulds and press down firmly.​

• Final proofing: approx. 60 minutes at 32°C, 75% RH.​

• Baking in a conventional oven: 8–10 minutes at 260°C, with the oven door open.​

• Baking in a fan oven: approx. 30 minutes at approx. 250°C, with the door left open.​

Assembling the Gourmet BBQ Burger​

• Grilled wholemeal bun​

• Generous helping of BBQ sauce​

• Well-done minced beef patty (charred effect)​

• Melt-in-the-mouth cheddar​

• Crispy bacon​

• Caramelised onions​

• Pickles​

• Option: double steak for those with a hearty appetite​

• Close the lid and serve.​
