American Cinnamon Rolls

Preparations

1. Prepare the dough

  1. In a large bowl, mix together the flour, sugar, and salt.
  2. In another bowl, dissolve the yeast in the lukewarm milk (not too hot) and let it rest for 5 to 10 minutes.
  3. Pour the yeast-milk mixture into the flour, add the melted butter and the egg.
  4. Knead for 10 minutes until you obtain a soft and elastic dough (it should come away from the sides).
  5. Cover with a cloth and let rise for 1 hour 30 minutes at room temperature (or until it has doubled in volume).

2. Prepare the filling

  1. In a bowl, mix the softened butter, brown sugar and cinnamon until you obtain a smooth paste.

3. Shape the rolls

  1. Degas the dough (press gently to expel the air).
  2. Spread out into a large rectangle of approximately 40 x 30 cm.
  3. Spread the topping over the entire surface.
  4. Roll the dough over itself (lengthwise) to form a large sausage shape. 
  5. Cut into 8 to 10 equal slices using a very sharp knife. 
  6. Arrange the rolls in the buttered dish, spacing them slightly apart.

4. Second shoot

Cover the dish and let it rest for 45 minutes to 1 hour, allowing the rolls to rise again.

5. Cooking

  1. Preheat the oven to 180°C (fan oven).
  2. Bake for 20 to 25 minutes, until golden brown.

6. Prepare the icing

  1. Mix the icing sugar, milk and vanilla until you obtain a smooth and slightly runny texture. 
  2. Pour the icing over the still-warm rolls so that it melts slightly.
